How to make and store breakfast burritos

Breakfast Burritos

If you like to meal prep then this breakfast is for you! Or if you are like me and SLEEP is extremely important, then you must try this money saving, time saving, and delicious breakfast trick!

Breakfast burritos are a must in our house. I am sure most people can relate with the juggling of schedules that breakfast is a tricky meal to make. I roll out of bed and get ready for work just in time to leave … but I never calculate time for breakfast. Life is hard – but here is a trick to making it easier!

We have all heard over and over again that breakfast is one of the most important meals of the day. Instead of slaving over breakfast all morning only to turn around and clean it up in time for lunch…. do a little bit of meal prep and make breakfast burritos!

On the first Saturday of every month I make about 25 breakfast burritos. Now I know that 25 burritos isn’t enough for the family to eat everyday, but it is enough to help when needed! Our other breakfast ideas include cereal, blueberry muffin mix, and yogurt.

We freeze our breakfast burritos to make sure they stay good for the whole month (or two); but instead of freezing them you could just as easily put them in the fridge as long as you know you’ll eat them within a couple weeks. When we want to eat them we pull one out, unwrap it, grab a paper towel and put it in the microwave for one to two minutes; making sure to flip halfway through.

Let’s get to to the dirty work!

Here is what you’ll need:

20-25 tortillas (the bigger the better)

1  to 1.5 lbs meat of choice (we like ground maple sausage)

18 -24 eggs

Two 30 oz bag of shredded potatoes (aka hash browns)

2-4 cups of cheese (we use cheddar)

butter or oil for cooking (I love to use Coconut oil, find some here)

**One of the best things about this recipe is that it is so customizable. If you prefer mozzarella cheese instead of cheddar then use that! Or using Coconut oil instead of butter or visa versa. And like mentioned above we like maple sausage. We think it adds a little extra flavor, but if you don’t like it then just use regular! Explore what your tastebuds like and then do it!

Directions

  1. In a large sauce pan cook sausage on medium heat. After it is cooked, drain in strainer to release the grease (put paper towel in strainer for easy cleanup).
  2. In either the same pan or a different pan, scramble the eggs. Make sure to add seasonings such as salt and pepper. Once cooked, move to large bowl.
  3. In the same pan cook the hash browns. You will need some butter or oil to help it cook. I prefer Coconut oil.
    • You can use the same pan for all of these, just cook each thing one at a time, or you can try to juggle cooking all three things (meat, eggs, and hash browns) at the same time. Pick your poison.
  4. Add the sausage, eggs, and hash browns into one large bowl. Mix together and let cool.
  5. Add cheese and mix again.
  6. Spoon the mix onto a tortilla and fold like a burrito!
  7. Wrap the burrito in plastic wrap
  8. Repeat until you run out of tortillas or sausage, egg, and hash brown mix.
  9. Place in freezer safe storage bin (or just straight into the freezer) and enjoy!

They last two months in the freezer and 3 weeks in the fridge.

The burritos you pull out from the freezer will take longer to cook than the ones from the fridge. It can sometimes be hard to cook the burrito all the way through so I like to do 3 minutes in the microwave and flip halfway through. If they are from the fridge I do 1 minute with a flip halfway through.
